Summary
This is the easiest, most basic stir-fry you can fix. If you feel like experimenting with the foods in your refrigerator, this is a great place to start.

What you’ll need
2 tbsp. olive oil2 small garlic cloves, minced1 med onion, minced1 cup zucchini, sliced3 large carrots, sliced8 med crimini mushrooms, sliced1 large green pepper, chopped2 tbsp. wheat-free tamari1 dash sea salt and pepper (to taste)

Instructions
Step 1
Saute garlic and onion in olive oil over medium-high heat until softened.
Step 2
Add other vegetables and seasonings; cook, stirring often, until vegetables are crisp-tender.
Step 3
SUBSTITUTIONS: Ideas for seasonings- red pepper flakes, dried basil, toasted sesame oil (1 tablespoon added at the end of cooking for a nutty Asian flavor), curry paste (1 teaspoon), milk thistle seasoning salt, or nuts for garnish (ground or whole). If you include hearty greens such as kale, chard, etc., add a little water to steam them.
