2 cups all purpose flour
7-1/4 teaspoons sugar substitute for recipes or 24 packets or 1-cup measurable sugar substitute
2 teaspoons baking powder
1/8 teaspoon salt
1 cup orange juice
4 tablespoons margarine, melted
2 egg whites, slightly beaten or egg substitute equivalent to one egg
1 teaspoon grated orange rind

Combine flour, sugar substitute, baking powder and salt in a large bowl. Add orange juice, margarine, egg and orange rind. Mix well. Spray muffin tins with non-stick cooking spray. Fill tins 2/3 full. Bake at 375-degrees for 20 to 25 minutes. Cool on wire rack.

Recipe makes about nine muffins.
