1/2 cup orange juice
1/3 cup oil
1/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons cinnamon
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups grated carrots

1. Preheat oven to 350 degrees.
2. In a large mixing bowl, combine orange juice, oil, sugar, eggand vanilla; set aside.
3. In another bowl, combine flours, spices, baking powder, baking soda and salt; mix well.
4. Add dry ingredients to orange juice mixture, stirring just until dry ingredients are moistened. Fold in carrots.
5. Bake in a 9x5x3-inch loaf pan coated with cooking spray for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
