6 ounces uncooked elbow macaroni
1 pound extra-lean ground beef or ground turkey (7% fat)
½ green pepper, chopped
1 small onion, chopped
1 can (14.5 ounces) diced tomatoes*
1 can (8 ounces) tomato sauce*
1 can (4 ounces) mushroom pieces and stems, drained and rinsed
¾ cup (3 ounces) grated, reduced-fat cheddar cheese
½ teaspoon chopped garlic
½ teaspoon chili powder
¼ teaspoon salt (optional)
*Sodium is figured for no added salt.
Preheat oven 350 degrees. Cook macaroni according to package directions. Drain.
Spray a large skillet with nonstick cooking spray. Add ground meat, green pepper, and onion. Sauté until meat is cooked. Add remaining ingredients and macaroni. Pour into a 2 1/2 –quart covered casserole that has been sprayed with nonstick cooking spray.
Bake, covered, for 35-40 minutes or until thoroughly heated.
