This makes a pretty festive and original eggnog but replaces sugar with measurable sweetener and full fat milk with skim.

What you’ll need
2 cup skim milk2 tbsp. cornstarch1/2 cup measurable sweetener2 med egg, beaten2 tsp. vanilla1/4 tsp. ground cinnamon2 cup skim milk, chilled1/8 tsp. ground nutmeg

Step 1
Mix 2-cups milk, cornstarch, and sweetener in a small saucepan; heat to boiling; boil, stirring constantly for one minute.
Step 2
Beat eggs in medium bowl. Mix about half the milk mixture into the eggs; then add this egg mixture to remaining milk in saucepan. Cook over low heat until slightly thickened, one to two minutes, stirring constantly.
Step 3
Remove from heat and stir in vanilla and cinnamon. Cool to room temperature; refrigerate until chilled, or until serving time.
Step 4
Stir 2-cups milk into custard mixture; serve in small glasses or punch cups. Sprinkle lightly with nutmeg.
Step 5
Variation: 1 to 1-1/2 teaspoons rum or brandy extract can be stirred into the eggnog.
