What you’ll need
1/2 cup potato granules1 1/2 cup boiling water2 large whole eggs and 4 egg whites2 tsp. granulated sugar1/2 tsp. ground cinnamon1 cup peeled and grated Granny Smith or Golden Delicious apple1/4 cup pecans1 container plain nonfat yogurt, sour cream, or applesauce (optional)
To prepare the potatoes, add potato granules to a medium-sized bowl. Gradually pour the boiling water over the potato granules, whisking continuously to mix and whip.
In a small bowl, beat together the eggs, sugar, and cinnamon. Beat into the potatoes. Fold in the grated apple and chopped pecans.
Bring a nonstick skillet or griddle treated with nonstick spray to temperature over medium heat. (If using an electric griddle, preheat to 350-380 degrees Fahrenheit)
Cook the pancakes on both sides until golden brown. Serve hot, plain or topped with plain nonfat yogurt, sour cream, or applesauce.
