1/3 cup diced red bell pepper
1/3 cup diced green bell pepper
2 tablespoons diced onion
½ cup diced tomato
1 teaspoon chopped garlic
½ teaspoon dried cilantro
½ teaspoon dried basil
¼ teaspoon ground cumin
½ pound cooked (shelled and deveined) bay shrimp
5 whole-wheat tortillas (8 inch)
½ cup salsa, thick and chunky
2 ounces (1/2 cup) grated reduced-fat cheddar cheese
Preheat oven to 350 degrees. Spray skillet with nonstick cooking spray. Over medium heat, sauté first three ingredients until tender. Mix in tomato, garlic, and seasonings. Sauté 1-2 minutes. Remove from heat and add shrimp.
Spoon filling onto each tortilla. Roll tightly and place seam side down in an 8” x 8” baking dish that has been sprayed with nonstick cooking spray. Pour salsa over tortillas. Bake 10 minutes. Top with cheese and return to the oven until cheese is melted.
