This salad complements any dinner or tastes great as a mid-afternoon snack.

What you’ll need
1 lb carrots, cut into 3-inch long, thin sticks2 tbsp. red wine vinegar2 tbsp. olive oil3 med garlic cloves, minced or pressed1 pinch sea salt to taste (optional)1 pinch pepper (to taste)

Step 1
Steam the carrot sticks till crisp-tender.Step 2
In a small bowl, whisk together remaining ingredients.Step 3
Toss together carrots and dressing in a sealable container. allow carrots to cool, seal container, and invert a few times.Step 4
Store in refrigerator until serving time (at least 1 hour, preferably overnight). Periodically invert the container.
