This is a very easy breakfast to whip together for yourself or your children and offers a good source of complete protein in the morning. (NOTE: Use pasteurized eggs for safety)
What you’ll need
2 med organic eggs1 cup rice milk, chilled1 tbsp. vanilla extract1 dash cinnamon1 dash nutmeg
Combine all ingredients in a large cup or bowl, and mix well until mixture looks uniform.
Strain mixture through small strainer into a serving glass and serve.
SUBSTITUTIONS: Soy milk or another alternate milk can be use in place of rice milk.
